Lane B • Recovery-centered market-house
Feed the house. Train in real conditions. Earn trust one meal at a time.
The Open Table Café, Kitchen & Bodega is a phased food and hospitality enterprise designed to nourish the community, create supervised culinary practice, fulfill reliable meal commitments, and grow only as fast as its controls can carry it.
Controlled phased launch
Concept visualization Year-one identity
The Kitchen is not a restaurant underwriter.
The first job is to feed the house in a structured way, fulfill a small number of reliable meal commitments, and create a real training environment for recovery-to-work discipline.
Public retail, custom catering, delivery brands, kitchen rental, and a full restaurant schedule must wait until staffing, food safety, inventory, access control, closeout, and repeat buyer demand are proven.
Launch-first service lines
Small enough to govern. Real enough to invoice.
Internal meals
Scheduled meals for members, staff, training, meetings, and program activity with clear internal budget ownership.
Partner meal contracts
Standardized boxed, plated, or bulk-tray meals for known treatment, housing, youth, recovery, or community partners.
Sponsor-backed community dinners
Accessible hospitality funded by sponsors or donors, with attendance, meal counts, costs, and follow-up documented.
Recovery meals
Controlled frozen or take-home meals for members, families, housing partners, or youth households where sourcing and storage are safe.
Meetings and trainings
Boxed lunches, coffee service, and simple food packages for partner trainings, board meetings, and community roundtables.
Mission retail — later
A limited café window, grab-and-go service, and curated bodega products only after production flow is stable.
Customer clarity
The person eating the meal is not always the person paying for it.

Early-stage no list
No custom-menu sprawl, full-service weddings, uncontrolled delivery-app expansion, open kitchen access, rental without insurance and agreements, undocumented purchasing, or public commitments that exceed the current staffing and safety system.
Meal, sponsor, and food-service inquiry
Start with the need, volume, payer, schedule, and service standard.
Submitting this form begins a conversation. It does not create a catering contract, reserve a date, or guarantee service availability.
