Lane B • Recovery-centered market-house

Feed the house. Train in real conditions. Earn trust one meal at a time.

The Open Table Café, Kitchen & Bodega is a phased food and hospitality enterprise designed to nourish the community, create supervised culinary practice, fulfill reliable meal commitments, and grow only as fast as its controls can carry it.

Controlled phased launch

Otis inside a warm café and bodega with coffee, food, local goods, and community members. Concept visualization
Concept imagery illustrates the intended environment and program experience; it is not a photograph of an identified member or a claim that every pictured service is currently operating.

Year-one identity

The Kitchen is not a restaurant underwriter.

The first job is to feed the house in a structured way, fulfill a small number of reliable meal commitments, and create a real training environment for recovery-to-work discipline.

Public retail, custom catering, delivery brands, kitchen rental, and a full restaurant schedule must wait until staffing, food safety, inventory, access control, closeout, and repeat buyer demand are proven.

Launch-first service lines

Small enough to govern. Real enough to invoice.

01

Internal meals

Scheduled meals for members, staff, training, meetings, and program activity with clear internal budget ownership.

02

Partner meal contracts

Standardized boxed, plated, or bulk-tray meals for known treatment, housing, youth, recovery, or community partners.

03

Sponsor-backed community dinners

Accessible hospitality funded by sponsors or donors, with attendance, meal counts, costs, and follow-up documented.

04

Recovery meals

Controlled frozen or take-home meals for members, families, housing partners, or youth households where sourcing and storage are safe.

05

Meetings and trainings

Boxed lunches, coffee service, and simple food packages for partner trainings, board meetings, and community roundtables.

06

Mission retail — later

A limited café window, grab-and-go service, and curated bodega products only after production flow is stable.

Customer clarity

The person eating the meal is not always the person paying for it.

Likely payers

  • Partner organizations with standing meal agreements
  • Internal programs with approved food budgets
  • Sponsors underwriting free or reduced-cost meal access
  • Contract clients purchasing event or training food service
  • Retail guests during approved public service windows

  • Open Table members and staff
  • Participants in partner treatment or recovery programs
  • Residents in aligned recovery or housing environments

Operating proof

Trust is built in the logs nobody applauds.

01

Food safety

Person-in-Charge coverage, employee health rules, temperature control, sanitizer testing, allergen practices, and incident response.

02

Production

Approved recipes, portions, batch plans, packaging labels, order accuracy, holding quality, and delivery records.

03

Inventory

Receiving logs, approved sources, FIFO, waste, variance, secure storage, and scheduled counts.

04

Closeout

Cleaning, cooling, storage, cash/POS reconciliation when active, key control, equipment issues, and supervisor sign-off.

Early-stage no list

No custom-menu sprawl, full-service weddings, uncontrolled delivery-app expansion, open kitchen access, rental without insurance and agreements, undocumented purchasing, or public commitments that exceed the current staffing and safety system.

Meal, sponsor, and food-service inquiry

Start with the need, volume, payer, schedule, and service standard.

Submitting this form begins a conversation. It does not create a catering contract, reserve a date, or guarantee service availability.

Website-form boundary: Do not submit emergency information, diagnoses, medical records, medication lists, Social Security numbers, insurance numbers, detailed justice records, or other sensitive clinical information.

Required fields are marked with an asterisk. Inquiry records are stored privately in WordPress for authorized follow-up and are subject to the site retention setting.
